Grilled courgettes with tuna are a richer and more nourishing version of the classic grilled courgettes. Yellowfin tuna in oil is added, which delicacy meets well the flavor of the courgettes. We can serve them as a rich side dish or as a fresh summer main dish, ideal to keep ready in the fridge or to fill sandwiches and toast, definitively, a real joker in the kitchen! Here we propose courgettes only with garlic-scented oil and tuna fillets but if you want you can add lemon juice, capers, Taggiasca olives and everything that your imagination or taste suggests.

Ingredients
  

  • 2 courgettes
  • 160 g Orlando tuna fillets in olive oil 300 g jar
  • to taste salt
  • to taste Extra virgin olive oil
  • 1 garlic clove

Instructions

  • Let’s wash and clean the courgettes and with the help of a mandolin, in order to have slices all of the same thickness, let’s obtain slices half a centimeter thick by cutting them along the length of the courgette itself.
  • Heat a non-stick plate, on a medium-high heat, or on an electric grill, and proceed on cooking the courgettes.
  • While the courgettes are cooking, put the oil, the crushed garlic clove and the chopped parsley in a small bowl so that it flavours.
  • As we grill the courgettes, place them in a baking dish or serving dish, salt them slightly and season them with the flavored oil.
  • Now add the well-drained tuna fillets, distributing them over all the courgettes and, if necessary, add a little more flavored oil.
  • Let it flavor for half an hour in the fridge before serving our grilled courgettes with tuna fillets.
